I collect old machine tools, and I bought a very cherry old Black and Decker valve grinder that came with what I will guess to be 1940s Van Dorn portable seat grinder. Everthing is complete with the exception of the 11/32s pilot. The pilot itself is there, but it has a small, three fingered expansion device at the end of it, and it's broken.

I live in a low-tech world...1950's Snap on/Black and Decker stuff with the original pilot guide spindle for flatheads. Seat grinder and valve grinder. That guide part and the stones and such are still readily available. In a higher tech world, one might copper plate and press in the guides and use a common guide.
For example, pilots originally made by Sioux are .385", Kwik-Way are .437", Black & Decker, Snap-On, Winona Van Norman are all .375". Wear tolerance on the top of the pilot is .0015" and if you have wear on the top of the pilot and wear on the ID of the stone holder you are not going to be able to grind accurately or safely.
OTTO-Sawyer. For $5.00 More, I got an Extra 1/16th Capacity. Paid $25.00 for my 11/16ths "Super-Service" grinder. I Too need to find some new wheels and start 'practicing' again as I haven't ground any valves since High School 42 years ago. I'm Thinking NAPA carries parts for them, or at least used to at one time anyway.

There are a few videos here black and decker valve grinder history - Bing video that are worth looking at as they are of similar models. From what I can see you are missing the diamond nibs for dressing the stones and their holders.

Valve Grinding Oil. A pet peeve of mine is using transmission oil in your valve refacer instead of valve grinding oil. You should not use transmission oil to grind valves. Yes it is an oil, and yes, it is cheap. However, transmission oil will actually attack the bond that holds the grains together, decreasing the life of your abrasive dramatically.
